I remember a post by Michael back in early April that shows Sean and Kristen making Mom's potato salad. I commented that somebody needs to try and write this recipe down. Anyone want to give it a try?
6 Medium sized (boiled in-the-skin)Yukon potatoes cooled. 4 Boiled eggs cooled. 4 Stalks celery hearts plus tops. 1 Large Walla Walla Sweet onion or one large sweet onion. 1 Tablespoon crushed fresh dill or 1 teaspoon dried dill 3 Claussen’s Bread and Butter pickles. ¼ Cup Seasoned Rice vinegar 1 ½ Cups lite sour cream Salt and pepper to taste
The secret to a good potato salad is the dressing. Remove the yokes from the egg whites and mash. Combine the mashed yokes with the mayo, sour cream, dill and salt and pepper. Dice the potatoes, egg whites, celery and onion together, then proceed to pour dressing over all the ingredients. Our customers ordered our potato salad to go for their big pic-nics. Enjoy
