Recipe Time!

If you are like me, you LOVE pumpkin anything... & why not have it all year round. Here is a DELISH pumpkin cookie recipe that will make you want to eat about 50 of them!

Old Fashioned Soft Pumpkin Cookies
Estimated Time: Prep-10 min; Cooking-18 min; Cooling-2 min

Yields- 36 cookies

Ingredients:
2 1/2 cups all-purpose flour
1 tsp soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp gound nutmeg
1/2 tsp salt
1 1/2 cups granulated sugar
1 cup pumpkin (canned)
1 large egg
1 tsp vanilla extract
glaze (recipe follows)

Directions:
PREHEAT oven to 350. Grease baking sheets (I just use foil & don't grease.. saves you from making a huge mess & most of the time i don't have to wash the cookie sheet)

COMBINE flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded Tablespoon onto baking sheets.

BAKE for 15 to 18 mins. or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.

FOR GLAZE:
COMBINE 2 cups sifted powdered sugar, 3 T milk, 1 T melted butter and 1 tsp vanilla extract in small bowl until smooth.
